Thank you for visiting my blog, Caty's Pantry! When I was a young person, I knew I wanted to be a mom and a homemaker. Throughout my adult life, I have had several jobs and a career but none that I enjoyed as much as being a homemaker. I have inherited a notebook written in my great grandmother's own handwriting, filled with authentic, old recipes that she made with love for her family and has passed down to us. I can still remember going to visit her and there would always be a special home baked pan of bars or cake sitting on the counter waiting for us. She was born in 1903 in Germany and her recipes come from her homeland. Her family moved to the United States when she was a young girl and they settled in Minnesota, which is where I was born and raised as well. Welcome to my blog, affectionately named after my Great Grandmother Catherine who was known to those who loved her as Caty. She had many talents and skills that I would love to share with others. Here is the first recipe! I can't wait to hear what you think!
First, preheat the oven to 350 degrees and prepare your baking pan of choice (9 x9 square pan would be best) by using cooking spray to prevent cake from sticking.
*Sunshine Cake*
3 egg yokes
3/4 cup sugar
3 Tablespoons butter (or vegetable shortening) softened
salt to taste
1 teaspoon vanilla
1/2 cup milk
1 1/2 cups flour
3 teaspoons baking powder
In a mixing bowl, mix egg yolks, sugar, butter (or shortening), vanilla and milk
After the above are combined, slowly add the flour and baking powder.
Pour into prepared pan and bake for about 25 minutes or until toothpick comes out clean when inserted into cake. Oven temperatures vary so keep a close eye on it!
You can frost this cake as you desire! This is a yummy cake for a quick and easy weekday dessert! I hope you enjoy it as much as our family does!
