This cake is an authentic recipe from western Europe from my Great grandmother Caty. When we went to visit her after she moved to the United States, she often had this delicious cake sitting on the counter waiting for us. It makes a great after school snack as well!
1/2 cup butter, softened
2 eggs beaten
3 bananas slightly mashed
1/4 cup buttermilk
2 cups flour
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
In a large mixing bowl, mix together on medium speed, the butter, eggs, bananas and buttermilk. When the ingredients are mixed, add the flour, baking powder, baking soda and salt.
Mix with electric mixer (or by hand if you do not have one).
Pour ingredients into a cake pan that has been greased and bake for 30 minutes or until toothpick inserted in center comes out clean.
